Be sure to read the recipe all the way through… twice!  Especially if it is a handed down recipe, like this one.

Recipes 101
Here are my rules for using recipes:
1. Read the whole thing from beginning to end TWICE before even going to the store. You never know what equipment you might need.

2. Make a grocery list. I made a beautiful pear and almond tart once, but I had to go next door to borrow an egg from my neighbor.  Then I had to go back again when the topping called for an egg as well.  Good thing I have nice neighbors.

3. Wear an apron or an old T-shirt over your clothes.  You will make a mess. There’s nothing worse than planning a dinner party and getting olive oil on your dry clean only blouse. It will never come out all the way.

4. Have fun with it. After following the recipe once, find a way to improvise and put your own spin on the dish. Eventually you won’t need a recipe at all!
