Maki Minis

2 3oz. Salmon Fillets
2 Dinner Rolls (halved)
Rocket Arugula
Salt and Pepper
Lemon-Thyme Vinaigrette
Wasabi Mayo (store bought)
Heat Grill. Baste salmon fillets with oil, season with salt and pepper. Toast buns on grill. Grill fillets for 1 minute each side. Lightly toss arugula with vinaigrette, place a bed on each bun, top with grilled salmon. Dress with wasabi mayo as desired.
