Gianmarco’s Bone in Ribeye

Get grilling with this recipe from a Homewood favorite.Bone in Ribeye with Mac & Cheese, Rapini, Onion Rings and Blue Cheese Butter
Ingredients
4 16 oz. Bone In Ribeye
Sea Salt
Cracked Black Pepper
Grill on each side 4 minutes for medium rare. Let rest for 3 minutes before serving.
Mac & Cheese
Blanched Macaroni
8 oz. Mixed Grated Cheese-Fontina, Parm, Asiago, and Goat
1 TBL Sweet Butter
1/2 Cup Cream
Salt and Pepper
Seasoned Bread Crumbs
In a deep skillet bring the butter and cream to a slow simmer then add the cheese and melt, stirring until smooth. Add the pasta stire and season with the salt and pepper top with the breadcrubs and parm bake in a 400 degree oven until golden brown approx 4 minutes.
Rapini
Trim and blanch for 3 minutes in salted boiling water. Drain then saute with x virgin olive oil, garlic, and crushed red pepper.
Blue Cheese Butter
1/2 unsalted butter softened
1/2 crumbled blue cheese
In a food processor blend the butter and blue cheese. Roll up in parchment paper and refrigerate.
Onion Rings
1 LG Vadalia Onion Sliced Thin
1 Cup Buttermilk
1 Cup Seasoned Corn Meal
2 Cup Oil for Frying
Soak onions in the buttermilk. Drain then drudge in cornmeal set aside for 5 minutes then fry until golden.
