Summer Time Poppy Seed Citrus-Yogurt Muffins
We traditionally think of summer as a time for fresh berries,
but this muffin is light and refreshing, perfect for the hot weather!

Yield: 1 dz

Ingredients
2 C All-purpose flour
¾ C Extra-fine granulated sugar
1 T Lemon zest, grated
1 T Lime zest, grated
1 T Orange zest, grated
1 T Baking powder
Pinch Salt
2 T Poppy seeds
1 C Plain yogurt
½ C Sunflower oil
1 ea Egg, lightly beaten

Method
Preheat a conventional oven to 400oF degrees. If using a muffin pan with no liners, lightly spray it with pan spray.
Combine the flour, sugar, lemon, lime and orange zest, baking powder, salt and poppy seeds.
Separately, combine yogurt, oil and egg and mix until well blended. Combine the dry and the wet ingredients and stir until just combined. Do not overmix!
Spoon the muffin batter into the greased pan and bake for approximately 20 minutes. Once out of the oven, cool for 5 minutes before turning out the muffins.

Citrus Glaze (optional)
Ingredients
1 T Lemon zest, grated
1 T Lime zest, grated
1 T Orange zest, grated
5 T Water
½ C Extra-fine granulated sugar
Method
Combine the lemon, lime and orange zest with the water and sugar.
Cook in a small saucepan over a medium high heat until the sugar dissolves and then simmer for 5 minutes.
Spoon the glaze evenly over the muffins.
