Sweet Potatoe Pie
 
3 lbs. sweet potato
1 1/2 cup sugar
1 can (12 oz.) evaporated milk
2 eggs
1 teaspon vanilla
1/2 cup butter
 
boil sweet potatoes until tender. cool slightly and run cool water over them and peel should easily come off with fingers. beat sweet potatoes with remaining ingredients and pour into an unbaked pie shell. bake at 400F for 50 minutes to 1 hour.  cool completely before cutting.
